This risotto was created the old-school way: caramelize onions in olive oil, add the risotto and toast slightly, deglaze with white wine, slowly add stock. Finally, basil pesto and sautéed mushrooms are added. A classic dehydrated risotto — single serving pouch, just add boiling water.

What if my risotto isn't rehydrated?
Give it a little longer — altitude and ambient temperature affect rehydration. Stir this meal well; its thicker consistency needs a few extra stirs to incorporate all of the ingredients.
Are there a lot of mushrooms?
Short answer: yes. It's loaded with sautéed cremini mushrooms and the arborio rice is cooked in mushroom stock. If you're not a fan of mushrooms, choose a different meal!
