C180 for July and August nights and indoor sleepovers. C300 for May, June, September and October camping, or for a child who sleeps cold. The C300 is rated comfort 6 °C, the C180 comfort 12 °C.
The stuff sack is the extension: unzip the foot of the bag and zip the sack on to add length. Start short for a small child so there is less empty space to heat, and extend it as they grow.
